Ingredients
- 1 6.2 ox pkg fast cooking long-grain wild rice mix
- 1/8 cup butter
- 2 celery ribs, chopped
- 1 med onion, chopped
- 1 8 oz can sliced water chestnuts, drained
- 2 1/2 cups chopped chicken taken off a roaster chicken
- 2 cups shredded cheddar
- 1 can cream of mushroom soup
- 1 8 oz sour cream
- 1/2 cup milk
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup breadcrumbs
- sliced almonds

Preparation
Step 1
Prepare rice according to package directions. Melt butter in skillet - add celery & onions.
Saute 10 minutes. Stir in water chestnuts, rice, chicken 1 1/2 cups cheese & next 5 ingredients.
Spoon mixture into a lightly greased 9 x 13 baking dish. Top casserole with breadcrumbs. Bake @ 350 for 35 minutes. Sprinkle with remaining cheese and almonds - bake 5 more minutes.
