Ingredients

  • 1 small eggplant
  • 2 small zucchini
  • 1 large onion
  • 1 large green pepper
  • 1/3 olive oil
  • 1 clove garlic minced
  • 2 medium tomatoes, chopped
  • 2 tbsp parsley
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 1 tsp basil

Step 1

Cut eggplant into 1/2 inch cubes, zucchini into 1/4" slices. Slice onion thin, slice pepper into 1/4" strips. Saute eggplant in 2 tbsp oil in large skillet until light brown about 5 minutes. Remove and place in sauce pan. Add 1 tbsp oil to skillet saute zucchini until tender. Remove and add to sauce pan. Add oil, saute onion, pepper, and garlic until tender then add to sauce pan. Add tomatoes, parsley, salt, pepper, oregant and basil mix gently. Simmer mixture over low heat for 15 minutes. Remove cover and simmer 10 minutes or until mot free liquid is cooked away.
