Strawberry Tea Bread

Ingredients

  • 1 1/2 c. whole wheat flour
  • 1 1/2 c. rolled oats
  • 1/2 c. wheat bran
  • 1 tsp. each: cinnamon, baking soda
  • 1/2 tsp. each: baking powder, salt
  • 2 eggs
  • 3/4 c. Splenda
  • 1/2 c. each: canola oil, milk
  • 1 tsp.vanilla
  • 4 cups strawberries, fresh or frozen and thawed, mashed

Preparation

Step 1

Preheat oven to 375 F. Oil 2 loaf pans. In large bowl, stir together flour, oats, bran, cinnamon, baking soda, baking powder and salt. Set aside. In separate bowl whisk together egg, Splenda, oil, milk and vanilla. Pour over dry ingredients and stir just until moistened. Stir in strawberries. Divide evenly between pans. Bake 45-50 mins. Let cool in pan on rack for 15 mins. Turn out onto rack and let cool completely.

1 loaf= 14-16 slices. One serving is 1 slice. Wrap in plastic wrap and then foil and freeze up to one month.
