Double Chocolate Satin Pudding

Ingredients

  • 1/3 c. sugar
  • 2 T. cornstarch
  • 2 T. unsweetened cocoa
  • 1 t. instant espresso granules
  • 1/8 t. salt
  • 1 3/4 c. 2% low fat milk
  • 1 (1 oz) sq. semisweet chocolate, chopped
  • 1 t. vanilla

Preparation

Step 1

Combine first 5 ingredients in a saucepan; stir well. Gradually add milk, stirring with a whisk. Bring to a boil over medium heat, stirring constantly. Add chocolate; cook 1 minute, stirring constantly. Remove from heat; stir in vanilla. Pour into a bowl; cover and chill 2 hours.
