Stuffed Chicken Breasts

  • 2 – 4 chicken breasts
  • Olive Tapenade
  • 1 can stewed tomatoes
  • Provolone cheese
  • 4 whole garlic cloves, sliced thinly
  • Fresh parsley

Preparation

Step 1

Slice a pocket in the thick part of the chicken breast. Spoon ~ 1 Tbs. of the tapenade into breast, place in shallow baking pan and bake at 375º oven until lightly browned. Remove from oven and place one slice of provolone cheese over each chicken breast. Return to oven for 2 -3 minutes until cheese melts. Remove from oven, add garlic cloves and gently pour stewed tomatoes over breasts and return to oven. Reduce heat to 325º for ~ 20 minutes. Sprinkle with fresh parsley and serve.
