Apricot Bars

Ingredients

  • ½ cup soft butter
  • ¼ cup sugar
  • 1 cup sifted flour
  • Mix butter, sugar and flour until crumbly. Press into sheet pan. Bake in 350° oven for 15 minutes
  • 2/3 cups dried apricots
  • 1/3 cup flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 1 cup brown sugar, packed
  • 2 eggs, beaten
  • ½ tsp. vanilla
  • ½ cup chopped nuts

Preparation

Step 1

Rinse and boil apricots in water for 10 min. Drain, cool, chop. Sift flour, brown sugar, baking powder and salt. Gradually add brown sugar into eggs, add flour mixture, and add vanilla, nuts and apricots. Spread over baked layer. Bake in 350° oven for 30 minutes. Cut in squares/may be rolled in powdered sugar, if desired.
