Four cheese Mac and Cheese 1 Picture


  • ½ cup (1 stick) butter
  • ½ cup flour
  • 2 cups warmed milk
  • ½ lb Velveeta cut into small cubes
  • 1 cup shredded gruyere cheese
  • 1 cup shredded white aged cheddar cheese
  • 1/3 cup gorgonzola cheese cut into small cubes
  • 1 package pancetta cooked until crisp and crumbled
  • 4 cups cooked elbow macaroni
  • Cracker crumb topping
  • Crush 1 envelope of Ritz crackers and mix with 4 tablespoons of melted butter



Step 1

Melt butter in pan and whisk in flour to make a roux. Cook two minutes. Slowly whisk in milk, and cook until mixture boils and thickens stirring constantly. Add cheeses and cook until melted. Stir in elbow macaroni and pancetta. Mix thoroughly and pour into greased baking dish. Top with cracker crumb topping and bake for 30 minutes or until bubbly.
