Ingredients
- 2 cups green cabbage, grated
- 1 cup red cabbage, grated
- 1 cup carrot, grated
- 1/2 cup black olives, pitted and diced
- 1/2 cup pimientos
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 tbsp mayonnaise, fat-free
- Salt, to taste
- 2 tsp apple cider vinegar
- 1/4 tsp pepper
- 1/4 tsp cayenne pepper
Preparation
Step 1
Place grated cabbage and carrots in bowl; mix in olives, pimientos, onion and garlic. Mix together mayonnaise, vinegar, and spices; stir into coleslaw. Refrigerate to cool before serving.
