Ingredients
- 2&1/2c flour
- 3/4 c sugar
- 1&1/2 t baking powder and baking soda
- 1 t salt
- 2 T grated orange rind
- 1/2 c orange juice
- 1 egg
- 2 T vegetable oil
- 1&1/2 c rhubard
- 1 t orange extract
- opt: 1/2 chopped walnuts
Preparation
Step 1
Line 8 x 4 loaf pan with parchment paper
In bowl whisk together flour, sugar, baking powder, baking soda and salt
In separate bowl, whisk together orange rind and juice, egg and oil, add to flour mixture.
Sprinkle with rhubard and walnuts.
Stir until moist but still lumpy. Scrape into pan.
Bake at 350 oven for 1 hour.
Cream cheese icing tastes great on this loaf.
