Asparagus Salad

Ingredients
- 2 bunches of asparagus, cut into tips and 1inch pieces ;
- 1 bag snap peas, cut into thirds
- ½ purple onion; diced
- ½ red pepper; diced
- 1 package cherry or santa tomatoes; halved
- 1 cup candied walnuts; coarsely chopped
- 1 package crumbled feta or gorgonzola cheese
- 2/3 c dried cherries (optional)
- ½ cup balsamic vinaigrette (best if using white balsamic)

Preparation
Step 1
Mix asparagus through tomatoes. add balsamic vinaigrette and toss. Can be marinated overnight. Just before serving add the walnuts and gorgonzola and cherries.
