CREAMY BEEF CUPS

Ingredients
- 2 T butter
- 1/4 C finely chopped green pepper
- 1/4 C finely chopped onion
- 2 T Bisquick baking mix
- 1 1/2 C milk
- 2 packages (2 1/2 oz each) dried beef
- 4 hard-cooked eggs, coarsely chopped
- 2 C Bisquick baking mix
- 1 T parsley flakes
- 1/2 C cold water

Preparation
Step 1
Cook and stir butter, green pepper and onion in 2-quart saucepan until tender. Stir in 2 T baking mix. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in beef and eggs; heat through. Reduce heat; keep warm.
Heat oven to 425 degrees. Grease 12 medium muffin cups. Mix 2 C baking mix, the parsley and water until soft dough forms; beat vigorously 20 strokes. Drop dough by spoonfuls into muffin cups. Press dough on bottom and up side of each cup with floured hands. Spoon scant 1/4 C beef mixture into each cup. Bake until crust is golden brown, about 15 minutes.
