Broccoli and cauliflower casserole

  • 1 c white uncooked rice
  • 2 c water
  • 10 oz broccoli florets
  • 10 oz cauliflower florets
  • 1/4 c butter
  • 1 onion chopped
  • 1 cup shredded cheddar
  • 1 can 10.75 oz cream of chicken soup
  • 5 3/8 oz milk
  • 1 1/2 c crushed ritz crackers



Step 1

in sauce pan bring water to boil-add rice stir and reduce heat-cover and simmer 20 minutes
steam broccoli and cauliflower till just crisp tender about 3-4 mins
heat oven to 350
in large saucepan melt butter-saute onion-stir in broccoli, cauliflower and rice in saucepan-once coated stir in cheese, chicken soup, and milk
put in 13x9 pan and sprinkle with cracker crumbs
bake uncovered 30 mins
