Thai Chicken in Lettuce Cups

Ingredients

  • 12 ounces chicken breast tenders
  • ¼ cup bottled Thai ginger salad dressing and marinade
  • ½ cup thinly sliced red onion
  • 4 Boston or Bibb lettuce cups
  • 3 tablespoons coarsely chopped dry-roasted peanuts

Preparation

Step 1

1. In a medium bowl, combine chicken and dressing; toss to coat. Let stand at room temperature for 10 minutes.

2. Heat a large nonstick skillet over medium-high heat for 2 minutes; add undrained chicken mixture and onion. Cook and stir for 3 to 5 minutes or until chicken is no longer pink and onion is tender.

3. Divide chicken mixture among lettuce cups. Sprinkle with peanuts.
