  • 30 large plum tomatoes* – scoop out seeds
  • 2 c sugar
  • 2 c white vinegar
  • 3-4 red peppers
  • 8 large onions
  • 3 T salt
  • *place in microwave to precook



Step 1

Chop onions and peppers together.

Boil tomatoes 1 hour then add chopped onions/peppers, vinegar, salt and sugar. Cook 3 hours. Add two cinnamon sticks at this point and cook an additional 3 -4 hours.

Occasionally look at pot and remove approx. 1 tsp. of liquid on top – this will help the batch thicken quicker.

Place hot mixture into cleaned and sterilized jars – heat from mixture should seal. If not - Place in water bath (boiling water) for 5 minutes or use first.
