Ingredients

  • 6T. butter
  • 4 large onions, thinly sliced
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/4 tsp. black pepper
  • 2T. flour
  • 4 c. water
  • 3 vegetable cubes, crumbled
  • 1 clove garlic, minced
  • 1/2 tsp. parsley
  • 1/4 tsp. nutmeg
  • 1/4 tsp thyme
  • 1/4 c. dry sherry
  • 4 slices toasted french bread
  • 1c. grated parmesan or gruyere cheeese

Preparation

Step 1

1) melt 3T. butter in large pot

2) add onions and saute covered over a low heat for 15 minutes

3) add salt, sugar and pepper

4) raise heat to moderate temperature and cook for 20 minutes; stirring often, until onions are a deep golden brown but not burned

5) sprinkle with flour. cook2 minutes longer, stirring constantly

6) add water, veg. cubes and remaining seasoning

7) bring to boiling. lower heat and simmer, covered, for 20 minutes. add dry sherry

8) transfer to large casserole or 4 individual ramekans. spread toast with remaining butter. sprinkle with grated cheese.

9) place toast on top of soup. heat in 400 degree oven for 6-8 minutes or until cheese is melted and lightly browned
