Ingredients

  • 1 ) 4 packages gizzard and hearts
  • 2 ) 2 stick butter
  • 3 ) water
  • 4 ) 1 teaspoon pepper
  • 5 ) 2 teaspoons salt

Preparation

Step 1

Clean gizzards and remove any yellow skin. Add to large stockpot with butter to melt. Add salt and pepper. Cover gizzards with water. Bring to boil and cover. Reduce heat to a low simmer for approx. 1 1/2 hours or until fork tender. Remove lid and bring to boil again on high heat allowing water to evaporate and butter will coat gizzards. Will have a sauce consistency.
