Tuna Wraps Tex Mex Style

Ingredients
- 1 6oz can solid white tuna packed in water, drained, and flaked
- 1/2 c finely chopped yellow bell pepper
- 2 scallions, thinlyl sliced (white and light green portions only)
- 1/4 cup tomato salsa
- 2 TB chopped fresh cilantro
- 4 tsp low fat mayo
- 2 6 inch fat free flour tortillas
- 1/2 c loosely packed fresh baby spinach leaves or 2 romaine lettuce leaves

Preparation
Step 1
Combine tuna, bell pepper, scallions, salsa, and cilantro in a bowl.
Spread 2 tsp of the mayo over each tortilla. Top with tuna mixture, then the spinach leaves. Roll up the tortillas, cut each in half and serve at once or wrap in plastic wrap and refrigerate for up to 24 hours.
Per serving: 1 wrap. 215 calories, 2 g fat, 23 mg chol, 764 mg sodium, 26 g carb, 2 g fiber, 23 g fiber, 70 mg calcium.
