German Potato Salad

  • 6 medium potatoes
  • 1/8 tsp. pepper
  • 1 scallion
  • 1 tsp. salt
  • 6 slices bacon
  • 1/2 c. hot water
  • 1 tbsp. sugar
  • 1 tbsp. flour
  • 1/2 c. hot cider vinegar


Servings 4


Step 1

Cook potatoes in boiling water until done. Peel, cube, and season with salt and pepper. Keep hot. Chop parsley and onions fine and add to potatoes.

Cut up bacon and fry slowly until crisp and brown. Pour off all fat but 2 tbsp. Stirr in flour and cook, stirring constantly. After a couple of minutes add hot water, vinegar, and sugar. Bring to a boil stirring ocassionally. Pour over potatoes and toss gently Serve warm.
