Spinach with pine nuts and raisins

This recipe is delicious with any dark green leafy vegetable - try kale, for example, for a different touch

Ingredients

  • 2 Tbsp raisins
  • 1 Tbsp hot water
  • 1 tsp olive oil
  • 1 clove(s) garlic clove(s), minced (medium)
  • 1 bunch(es) spinach
  • 1 Tbsp pine nuts, toasted
  • 1/4 tsp table salt
  • 1/4 tsp black pepper

Preparation

Step 1

In a small microwavable bowl, plump raisins with hot water on high heat for 30 seconds.


In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.


Toss with raisins, nuts, salt and pepper. Serve immediately.
