Garlic Roast Beef and Gravy

Ingredients

  • 3lb top sirloin premium oven roast
  • 5 cloves garlic minced
  • 1 tsp salt
  • 1 tbsp olive oil
  • 3/4 tsp pepper
  • 1/3 tsp dried thyme
  • 1/4 cup red wine
  • 2 cups beef broth
  • 2 tbsp all-purpose flour

Preparation

Step 1

Place roast, fat side up on rack in roasting pan or crock pot
Mash garlic with salt into paste; stir in oil, 1/s tsp of pepper and thyme and rub all over top and sides of roast
Oven-sear uncovered at 450F for 25 mins and reduce to 325F for another 80 mins or until thermometer shows 140F for med-rare
Put crock pot on low for 3 hours
Transfer to cutting board and tent with foil for 10 - 15 mins before carving
Reserve juices from pan
Place roasting pan (or sauce pan) with juices over med-high heat
Add wine if using and whisk up brown bits
Add broth and remaining pepper and bring to simmer
Stir continuously
Whisk flour with 1/4 cup cold water and whisk into pan; simmer to boil stir until thickened
Strain and serve over roast beef
