Roasted Garlic Dressing

Ingredients

  • 2 heads garlic
  • 1/2 cup (reduced sodium) chicken stock
  • 1/4 cup wine or cider vinegar
  • 2 Tbsp. olive oil
  • 2 tsp. Dijon mustard
  • Salt and pepper to taste

Preparation

Step 1

Preheat oven to 400; pull off excess outside from garlic without separating cloves. Slice off 1/2 inch of each head, wrap individually in foil. Roast 40 minutes; garlic should be soft. Let cool slightly; combine all ingredients in blender or food processor. Blend until smooth.
