Ingredients

  • 8 OUNCES PENNE PASTA
  • 2 TABLESPOONS CANOLA OIL
  • 2 TABLESPOONS FLOUR
  • 2 C FAT FREE MILK
  • 2-1/3 CUPS SHREDDED FAT FREE CHEDDAR CHEESE
  • 1/4 TEASPOON SALT ( I OMIT )
  • 1/4 TEASPOON BLACK PEPPER ( I OMIT )

Preparation

Step 1

1. PREHEAT OVEN TO 350 DEGREES

2. COOK PENNE - DRAIN AND RINSE IN COLD WATER

3. MEANWHILE HEAT OIL IN LARGE SAUCEPAN OVER MEDIUM HEAT.

4. ADD FLOUR AND COOK STIRRING FOR ABOUT 2 MINUTES.

5. SLOWLY WHISK IN MILK UNTIL SMOOTH.

6. BRING TO BOIL AND COOK ABOUT 1 MINUTE. DO NOT BURN STIR SLOWLY WHILE COOKING.

7. REMOVE FROM HEAT AND WHISK IN 2 CUPS CHEESE.

8. SIR PASTA INTO SAUCE, POUR INTO 6 INDIVIDUAL BAKING DISHES OR A 2 QUART SHALLOW BAKING DISH.

9. SPRINKLE REMAING 1/3 CUP CHEESE OVER TOP.

10. BAKE UNTIL LIGHTLY BROWN AND BUBBLY ABOUT 15 MINUTES FOR INDIVIDUAL DISHES AND 25 MINUTES FOR LARGE BAKING DISH.

LET STAND 5 MINUTES BEFORE SERVING.
