Chewy Macaroons - Double Batch
- 8 Egg whites room temperature
- 2 teaspoons Vanilla or almond extract
- 8 tablespoons Flour
- 2 cups Sugar
- 1 teaspoon Salt
- 3 ea Flaked coconut bags
Preparation time 30mins
Cooking time 60mins
Preheat oven to 325 degrees.
Lightly grease and flour 2 large cookie sheets (don't use Tfal pan or you'll have to cook less time), set aside.
Chop up the coconut so it's in little pieces.
In large mixing bowl, beat egg whites until stiff but not dry.
Beat in vanilla.
In a separate bowl, mix together remaining ingredients.
Fold into egg whites.
Drop by rounded teaspoonfuls onto prepared cookie sheets 2 inches apart.
Bake 20 to 25 minutes or until golden brown on top. (23 minutes is perfect for the Shaughnessy oven!)
Cool slightly, then remove.
