Jenny's Jambalaya

Ingredients

  • ● 2 tbsp onion , chopped
  • ● as desired green pepper, chopped
  • ● 1 lb. ground beef/turkey, browned, drained
  • ● 1 14 oz can diced tomatoes, drained, but keep juice
  • ● water
  • ● 1 tsp salt
  • ● 1/2 tsp sugar
  • ● 1/4 tsp thyme
  • ● 1 small bay leaf
  • ● 1/2 cup tomato juice/ v-8/ tomato sauce, (added at end to make meal moister)
  • ● 1 1/3 cup instant rice, cooked

Preparation

Step 1

Cook onion, green pepper and meat, drain. Add tomatoes, and (water and juice from tomatoes to equal 1 1/2 cup), salt, sugar, thyme and bay leaf; cover, simmer for 5 min. Stir in rice, cover and simmer 5 min. Remove bay leaf. Should not be real runny. I add the tomato juice/sauce at end to see if it needs more moisture.

Serve with corn bread, noodles, applesauce, salad
