Ingredients
- 1 - 2 T olive oil
- 8 green onions, including tops, coarsely chopped
- 2 - 3 stalks celery, thinly sliced
- 1 - 2 cups thinly sliced mushrooms
- 1 green bell pepper, diced
- 1 can sliced water chestnuts, drained
- 2 -3 cups cold, cooked rice
- 1/2 to 1 cup leftover cooked ham or chicken (optional)
- 4 T light soy sauce
Preparation
Step 1
Heat large skillet, add oil. Add oinions, celery, green pepper & mushrooms. Stir-fry 2 minutes or until mushrooms are cooked. Add water chestnuts, rice, meat, if desired, & soy sauce. Cook, stirring, until heated through.
