Cheesy Hash Skillet

Everything’s better with bacon, and this cheesy hash and egg skillet is no exception. Frozen hash browns make short work of this diner-style dish.

Ingredients
- 6 slices Bacon
- 1 small onion, chopped
- 4 cups (1/2 of 32-oz. pkg.) frozen Southern-style hash browns
- 1-1/2 cups Shredded Cheddar Cheese
- 6 eggs
Preparation
Step 1
COOK bacon in large nonstick skillet on medium heat until crisp. Remove bacon from skillet, reserving 3 Tbsp. drippings in skillet. Drain bacon on paper towels.
ADD onions and potatoes to skillet; cover. Cook on medium-high heat 14 min. or until potatoes are browned, stirring occasionally. Stir in cheese.
MAKE 6 small wells in potato mixture; fill with eggs. Top with bacon; cook, covered, 3 to 4 min. or just until eggs are set. Let stand, covered, 1 min.

Husband's fav. We've been cooking this for over 2 years now. We also use the hash browns with bell peppers for the extra flavor. I also break up the bacon in bite sized pieces...still looks nice upon serving and is easier to mix together (if that's how you choose to eat it). Great with a spoonful of salsa also!
It tasted a little on the salty side (even with low sodium bacon). We still ate it. Maybe next time I'll substitute egg whites and try turkey bacon, to try and cut the salty taste.
My 17 year old daughter picked this out of the last magazine. We made it and it was a hit for the whole family. NO LEFTOVERS!! I've now made it two times and the last time I substituted velveeta and it was much creamier.

I made this twice the first time exactly how it was wrote and the cheese kinda burnt on the bottom after I stirred it in the potatoes the second time I altered it the same ingredients but instead of stirring the cheese in the potatoes I just sprinkled it on top and covered it until the cheese was melted and the eggs were set.
