One-Bowl Chocolate Cake

  • 1 1/3 cup whole wheat flour
  • 3/4 cup Splenda
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp. each baking soda, baking powder
  • 1/2 tsp. salt
  • 1 Omega 3 egg and 1 Omega 3 egg white
  • 2/3 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 2 tsp. canola oil
  • 1 tsp. vanilla
  • grated zest of 1 orange

Preparation

Step 1

Preheat oven to 350 F. Oil an 8" round cake pan or spring form pan. Cut a round of parchment to line bottom of pan. In mixer, mix flour, Splenda, cocoa, baking powder, baking soda, salt, eggs, buttermilk, applesauce, oil, vanilla and zest just until smooth. Pour batter into pan, smoothing top. Bake 20-25 mins. or until top springs back when lightly touched. Let cool in pan on rack for 30 mins. Remove from pan and remove parchment. Let cool completely on rack.

Can melt 8 oz, of 70% chocolate and drizzle over top.
