Molten chocolate cakes.
- 1 stick butter plus 3 Tbs cut up in small pieces
- 1/2 cup flour
- 51/2 oz of 70% cacoa chopped 11/4 cups
- 5 large eggs at room temp
- 3/4 cup sugar
Butter and flour 6 ramekins
Melt butter and chocolate in double boiler.
Meanwhile whisk together eggs and sugar until pale and thick.
In another bowl sift salt and flour
Fold egg mixture into chocolate mixture. Immediately fold in flour mixture.
Divide batter between ramekinsfilling each3/4 full.
Transfer to a rimmed baking sheet. Refrigerate for at least 1 hour.
Preheat oven to 400*
Bake until set 15 mins. Let cool 3 mins. Turn cakes onto plates.
They can be prepared up to 2 days before.
