- 200 g egg whites
- 200 g almond flour
- 350 g powdered sugar
- 75 g granulated sugar
- 1/2 tsp cream of tartar
- flavored
- buttercreme,
- ganache, curd, or
- thick fruit
- puree/compote
Preparation
Step 1
Combine egg whites and cream of tartar in mixer, whip on medium
speed until foamy
• Slowly add granulated sugar and turn the mixer up full speed, whip
until stiff peaks
• Combine powdered sugar and almond flour in a bowl-use a whisk
to mix together.
• Add dry ingredients on stir speed, in 3 additions
• Scrape down the bowl and attachment with a spatula then add color
or extracts as desired
• On the stir speed mix until the color is 2/3rds mixed in, then fold
the rest of the color in with a spatula. (Be gentle so as to not overmix
or break down the batter too much).
• Pour into piping bags and pipe onto sheet trays, then let sit for at
least an hour in a warm, dry place to form a skin on the top.
• Bake at 315 degrees, five minutes at a time for 10 minutes total, let
cool, then fill with desired filling.
