Golden Italian Rice Balls
When you’ve got leftover rice (prepare extra next time!) this is the perfect dish to make. These little snacks are crunchy on the outside, soft and spicy on the inside and absolutely great any time!

Ingredients
- 2 large eggs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 slice thinly sliced prosciutto
- 2 cups cooked rice
- 1 cup Italian bread crumbs
- 1/4 cup refrigerated fresh basil pesto
- Olive oil for frying
- 1 cup prepared marinara sauce

Step 1
1. In large bowl, whisk together eggs, salt and pepper. Mince prosciutto. Add prosciutto, rice, bread crumbs and pesto to egg mixture. Stir to combine completely and until pasty in texture.
2. Lay sheet of waxed paper on work surface. With 1/2-oz ice cream scoop, make 28 (1-1/4-inch) balls and place on waxed paper.
3. In large skillet over medi¬um, heat 1/2 inch oil. Add rice balls and fry, turning once, until golden brown on both sides, about 5 minutes. Drain on paper towels.
4. Meanwhile, place mari¬nara sauce in small, microwave-safe serving dish. Microwave on HIGH until heated through, about 1 min. Place dish in center of serving platter, surround with rice balls and serve.
