Baked Greek Shrimp
- 3 1/2 oz. serving
- 1 large onion thinly sliced
- 2 tbsp. olive oil
- 2 large tomatoes peeled and coarsely chopped
- 1 tbsp. fresh parsley
- 1 tsp. pepper
- 3 cloves minced garlic
- 2 lb. large shrimp ( de-veined )
- 3 0z. light crumbled feta cheese
Heat olive oil in a large skillet over medium heat.
Saute onions until tender
Add tomatoes, chopped parsley, pepper garlic.
Cover and simmer for 20-25 minutes stirring occasionally.
Add sauce in ovenproof dish.
Top with shrimp and crumble feta cheese over.
Bake uncovered at 350 degrees for 10-15 minutes or until shrimp are cooked and cheese is melted.
Garnish with parsley
