Baked Greek Shrimp

  • 3 1/2 oz. serving
  • 1 large onion thinly sliced
  • 2 tbsp. olive oil
  • 2 large tomatoes peeled and coarsely chopped
  • 1 tbsp. fresh parsley
  • 1 tsp. pepper
  • 3 cloves minced garlic
  • 2 lb. large shrimp ( de-veined )
  • 3 0z. light crumbled feta cheese



Step 1

Heat olive oil in a large skillet over medium heat.
Saute onions until tender
Add tomatoes, chopped parsley, pepper garlic.
Cover and simmer for 20-25 minutes stirring occasionally.
Add sauce in ovenproof dish.
Top with shrimp and crumble feta cheese over.
Bake uncovered at 350 degrees for 10-15 minutes or until shrimp are cooked and cheese is melted.
Garnish with parsley
