Mexican Twice Baked Potatoes

  • 2 large baking potatoes
  • 1/3 c salsa
  • 1 1/3 T butter
  • 1/4 c sour cream
  • 1/3 t salt
  • 1/8 t pepper
  • 1/4 c shredded cheddar cheese plus shredded cheddar cheese to top
  • onion salt
  • chili powder

Step 1

Bake potatoes at 400 for 50-60 mins or until soft. Take out of oven and let cool a little. Once cool, cut them in half lengthwise and scoop out meat from potato skin. Place potato mean in bowl along with butter, sals, sour cream and salt and pepper. Mix thoroughly. Add in the cheddar cheese and place potato mixture back into potato skins. Sprinkle with cheese on top and bake in oven for another 20 mins or until warmed through. Sprinkle with onion salt and chili powder to taste.
