Brownie Ice Cream Sandwhiches

Ingredients

  • 12 tbs. unsalted butter, cut into pieces
  • 5 oz. unsweetened chocolate, cut into pieces
  • 6 eggs, at room temperature
  • 2 cups sugar
  • 2 tbs. light corn syrup
  • ½ tsp. salt
  • 2 tsp. vanilla
  • 1 ½ cups flour
  • ½ tsp. chopped walnuts

Preparation

Step 1

Preheat oven to 350 degrees. Melt the butter, then remove pan from heat, then add the chocolate and let stand 1 minute. Whisk the chocolate until smooth. Set aside. Beat the eggs and sugar for 2 – 3 minutes until very light. Then add the cooled chocolate, syrup and vanilla. Add the flour with a wooden spoon and then add the nuts, mixing just until blended. Bake 12 – 15 minutes. Cook and cut cake in ½. Place soft ice cream onto 1 of the rectangles and then place the other slice of cake on top. Wrap the cake in plastic, pressing the ice cream on the sides. Freeze until firm, overnight.
