Ingredients
- 1 lb. button mushrooms, washed and thinly sliced
- 1/4 c. extra virgin olive oil + 1 Tblsp.
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- 4 scallions, thinly sliced
- 1 c. grape tomatoes, halved
- 1/8 c. pine nuts, toasted
- 1/2 c. chopped flat-leaf parsley
- 1/2 c. crumbled pecorino romano cheese
Preparation
Step 1
Toss the mushrooms with 1/4 c. oil, salt and pepper. Pour into salad serving bowl. Add in layers the scallions, tomatoes and pine nuts. Sprinkle with 1 Tbsp. olive oil and salt and pepper to taste. Sprinkle parsley over all, then sprinkle cheese overall. Do not toss.
