Mushroom Salad

Ingredients

  • 1 lb. button mushrooms, washed and thinly sliced
  • 1/4 c. extra virgin olive oil + 1 Tblsp.
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 4 scallions, thinly sliced
  • 1 c. grape tomatoes, halved
  • 1/8 c. pine nuts, toasted
  • 1/2 c. chopped flat-leaf parsley
  • 1/2 c. crumbled pecorino romano cheese

Preparation

Step 1

Toss the mushrooms with 1/4 c. oil, salt and pepper. Pour into salad serving bowl. Add in layers the scallions, tomatoes and pine nuts. Sprinkle with 1 Tbsp. olive oil and salt and pepper to taste. Sprinkle parsley over all, then sprinkle cheese overall. Do not toss.
