Ingredients
- 2 lbs. lamb shanks
- 2 carrots sliced
- 2 celery ribs, sliced
- 1 yellow onion chopped
- ½ tsp. minced or crushed garlic
- 2 cups chicken or lamb stock
- 1 T. tomato paste
- Salt and pepper
Preparation
Step 1
Season lamb shanks with salt and pepper. Brown in 450 degree oven until browned all over (about 20 minutes)
Sauté carrots, onions and celery in oil until soft. Add garlic and sauté one minute more. Add wine and reduce by one half. Add stock and reduce by one half. Whisk in tomato paste.
Put vegetables and stock in baking dish and put lamb shanks on top. Cover with foil and bake in a 325 degree oven for about 2 hours or until lamb is soft to the touch.
