Back Bacon Omlette

Ingredients

  • 1 tsp. canola oil
  • 1 egg
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. Parmesan
  • pinch pepper
  • 2 slices back bacon or ham, chopped
  • 1/4 red or green pepper, chopped

Preparation

Step 1

In small non-stick pan, heat oil over med-high heat. In bowl, using fork, stir together egg, basil, cheese and pepper. Pour into pan and cook for 5 mins., lifting edges to allow uncooked egg to run underneath, until almost set. Sprinkle bacon or ham over half the omlette. Using spatula, fold over other half and cook for 1 min.
