Broccoli & Onion Au Gratin

Ingredients

  • Cheese sauce:
  • 2 cups broccoli flowerettes
  • 1 medium onion, cut into eighths
  • 2 Tbsp butter
  • 2 Tbsp flour
  • ½ tsp salt
  • ¼ tsp crushed rosemary leaves
  • ¼ tsp pepper
  • 1 ½ cups milk
  • 1 cup shredded Swiss cheese
  • Topping:
  • 2 cups fresh breadcrumbs
  • 1/3 cup melted butter
  • 1/4 cup chopped fresh parsley

In a one quart saucepan, melt 2 Tbsp butter. Stir in flour, salt, rosemary and pepper. Cook over medium heat stirring constantly for 30 seconds until smooth and bubbly. Stir in milk. Continue cooking for 4-5 minutes until mixture thickens and comes to a full rolling boil. Boil for 1 minutes. Remove from heat and stir in cheese until smooth. In a 1 quart greased casserole, place broccoli and onion. Stir in cheese sauce. In a small bowl stir together all topping ingredients. Sprinkle over broccoli mixture. Bake at 350 for 30-35 minutes or until top is golden brown and broccoli is crisp tender.
