Surullitos De Maiz (Cornmeal Sticks)

Ingredients

  • 2 cups water
  • 1 1/4 teaspoon salt
  • 1 1/2 cups cornmeal
  • 1 cup packed, grated Edam cheese

Preparation

Step 1

Combine water and salt in saucepan; heat to boiling. Add cornmeal and mix thoroughly.

Cook over moderate heat for about 5 minutes, or until mixture separates from bottom and sides of pan. Remove from heat.

Add grated cheese and mix well. Take mixture by teaspoonfuls and shape into balls. In palms of hands roll balls to 1/2 inch thickness, in shape of small cigars.

Fry in deep hot fat (370 degrees on frying thermometer) for 2 to 3 minutes, or until golden brown drain on absorbent paper.
