Chicken and Panchetta

Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 3 oz pancetta
  • 1 T. olive oil
  • 3 – 4 cloves of garlic, minced
  • 1 large leak (bulb only), diced
  • 1 T. fresh oregano
  • 1 t. fresh thyme
  • Salt and pepper to taste

Preparation

Step 1

Saute all ingredients in a pan with olive oil until chicken is cooked through and browned.
