Ingredients
- 1 cup water
- 1 1/2 cups drained oil-packed sun-dried tomatoes
- 1 1/2 pounds plum tomatoes, cut into 1/2-inch pieces
- 3 shallots, sliced
- 2 Tbls. sugar
- 2 Tbls. chili-garlic sauce
- 1/2 teaspoon salt
- 1/3 cup chopped fresh cilantro
Preparation
Step 1
Bring 1 cup water to boil in heavy medium saucepan. Add sun-dried tomatoes. Remove from heat. Cover; steep 10 minutes. Add plum tomatoes, shallots, sugar, chili-garlic sauce, and salt and bring to boil. Reduce heat to low and simmer until almost all liquid evaporates, stirring occasionally, about 20 minutes. Remove from heat; mix in chopped cilantro. Cool jam completely.
Good with seafood.
