Ingredients

  • 2 cups rolled (not instant) oats
  • 1/2 cup walnuts, toasted and chopped
  • 1/3 cup maple syrup
  • 1 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • pinch of sea salt
  • 2 cups milk
  • 1 large egg
  • 3 tbs. unsalted butter, melted
  • 2 tsp. vanilla extract
  • 2 ripe bananas, sliced
  • 1 1/2 cups fresh or frozen blueberries or other berries

Step 1

Pre-heat oven to 375 with rack in top 1/3 of oven. Butter 8x8 inch baking pan. Mix dry ingredients in a bowl (oats, 1/2 the walnuts, baking powder, cinnamon and salt). In a separate bowl, whisk egg, syrup, milk, 1/2 the butter and vanilla. Arrange banana slices in a single layer on bottom of baking dish. Cover with 2/3 of the berries. Then cover with oat mixture. Slowly drizzle wet mixture over oats. Gently tap baking dish on counter a few times to make sure the liquid moves through the oats. Scatter remaining berries and nuts on top. Bake 35-45 min. until top is golden. Remove from oven, drizzle remaining butter on top. Serve with syrup.
