PUMPKIN PRALINE CHEESECAKE

Ingredients

  • 3/4 c. graham cracker crumbs
  • 1/2 c. ground pecans
  • 2 Tbs. sugar
  • 2 Tbs. brown sugar
  • 1/4 c. butter, melted
  • 3/4 c. sugar
  • 3/4 c. canned pumpkin
  • 3 egg yolks
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground mace
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 3 (8-oz.) pkg. cream cheese, softened
  • 1/4 c. plus 2 Tbs. sugar
  • 1 egg
  • 1 egg yolk
  • 2 Tbs. whipping cream
  • 1 Tbs. cornstarch
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. lemon extract
  • Praline topping (see below)
  • Whipped cream

Preparation

Step 1

Combine first 5 ingredients; mix well. Firmly press mixture into a 9" springform pan.
Combine 3/4 c. sugar, pumpkin, 3 egg yolks, spices, and salt in a medium bowl; mix well and set aside.
Beat cream cheese with electric mixer until light and fluffy; gradually add 1/4 cup plus 2 Tbs. sugar, mixing well. Add egg, egg yolk, and whipping cream, beating well. Add cornstarch and flavorings; beat until smooth. Add pumpkin mixture; mix well. Pour into prepared pan. Bake at 350º for 50-55 minutes. (Center may be soft but will firm when chilled.)
