Ingredients

  • 1-1/2 lbs ground beef
  • 1/2 cup chopped onion
  • 1 can cream of mushroom soup
  • 1 can condensed tomato soup
  • 1/2 cup milk
  • 1 package (9-oz.) cut green beans
  • 1 cup cooked sliced carrots
  • 6-8 servings mashed potatoes
  • Generous dash pepper
  • Shredded Cheddar cheese

Preparation

Step 1

In saucepan, brown beef and cook onion until tender. Stir to separate meat. Pour off the fat.

In a separate bowl, combine both soups and milk. Mix together adding additional milk to create sauce with desired consistency.

Combine soup mixture with pepper, green beans and carrots. Pour into 2-qt shallow baking dish. Spoon the mashed potatoes in two diagonal lines across the top of the casserole lengthwise. Or, if you prefer, cover the entire top of the casserole with the mashed potatoes.

Bake in a 350-degree oven for approximately 35-45 minutes or until the casserole begins to bubble.

Remove casserole from the oven and generously top the enitre casserole with the shredded cheddar cheese. Return the casserole to the oven for an addtional 5 minutes or just until the cheese melts.
