Ingredients

  • 3 cups (12 oz.) shredded cheddar cheese
  • 3 cups (12 oz.) shredded mozzarella cheese
  • 1/2 cup chopped red pepper
  • 1/3 cup chopped green onions
  • 2 tablespoons butter
  • 2 cups ham (diced)
  • 1/2 cup flour
  • 1 3/4 cup milk
  • 8 eggs (beatened)
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper

Preparation

Step 1

combine the cheeses, place 3 cups in a ungreased 13x9 pan set aside. In a large skillet saute red peppers and onions in butter until tender, drain. Spoon into baking dish. Sprinkle with ham and remaining cheeses.
In a large bowl whisk flour and milk until smooth. Stir in eggs, parsley, pepper, salt and basil until blended. Slowly pour over the cheeses. Bake uncovered at 350 for 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving.
