Ingredients

  • 1/2 c almonds, finely chopped
  • 1 tsp coriander, ground
  • 1 clove garlic, minced
  • 1/2 c onion
  • 1 c fennel
  • 3/4 c cilantro
  • 1 1/2 c black beans
  • 1 c bread crumbs
  • 1/2 c red bell pepper, minced
  • 2 tbsp toasted wheat germ
  • 1/4 tsp cloves, ground
  • 1/2 tsp salt
  • black pepper
  • 1 1/2 tsp evoo

Preparation

Step 1

heat almonds and coriander in dry frying pan over medium-high heat, stirring or shaking constantly until almonds are lightly toasted, about 1 minute.
food process garlic, onion, fennel, cilantro until finely chopped, add beans and pulse repeatedly until chopped but not liquidized. transfer to bowl and mix in almond mixture, bread crumbs, bell pepper, wheat germ and spices. taste and adjust seasonings.
shape into 6 patties with floured hands, adding more bread crumbs if necessary.
fry in 1 1/2 tbsp evoo over medium-high heat until crust forms, about 3 minutes per side.
