Ingredients
- 1 1/2 cup flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup seedless raisins
- 1/4 cup chopped pecans
- 1 cup sugar
- 2/3 cup corn oil
- 2 eggs
- 1/2 tsp. vanilla
- 1 1/2 cup grated carrot

Step 1
Sift the flour, baking powder, cinnamon and salt together. Mix the raisins and pecands and dredge with 2 Tbs. flour mixture. Mix the sugar and oil in a bowl until blended, then beat in te eggs and vanilla. Add the flour mixture and carrots and mix well. Stir in the raisin micture and turn into a greased 9" x 5" x 3" loaf pan. Bake at 350 for 1 hour and 10 minutes. Cool pan on a rack.
