Coconut Cupcakes

Ingredients

  • Frosting:
  • 1 1/3 cups cake flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 5 eggs, separated
  • 1 1/4 cups sugar, divided
  • 1/2 cup water
  • 1/2 cup oil
  • 1 tbs. vanilla
  • 1 cup sweeted coconut
  • 1/2 tsp. cream of tartar
  • 2 egg whites
  • 1 cup sugar
  • 1/4 cup water
  • 1 1/4 tsp. vanilla
  • 1 cup unsweetened coconut

Preparation

Step 1

Whisk together the flour, baking powder and salt, and set aside.

Beat yolks with 1 cup sugar on high for 2 minutes until mixture is pale and forms ribbons.

Add water, oil, vanilla, and coconut and whisk. Whisk in flour.

Beat the egg whites and cream of tartar in another bowl until foamhy. Slowly add the remaining 1/4 cup sugar and beat until stif peaks. Gently fold the egg whites into the batter. Bake for 20 - 25 minutes.

For the frosting combine the first 4 ingredients and set over a pot of simmering water, stir constantly until temperater reaches 160 degrees. Beat mix on high until stiff peaks form. Ice cupcakes and sprinkle with coconut.
