Dessert Pancake with Apple Topping

Ingredients

  • Apple Topping:
  • 1 c. flour
  • 2 c. 1% low-fat milk, divided
  • 2 T. sugar
  • 1 t. vanilla
  • 1/4 t. almond extract
  • 3 eggs, lightly beaten
  • dash of salt
  • 1 t. butter or margarine
  • 1 T. sifted powdered sugar
  • 2 t. butter or margarine
  • 3 medium Granny Smith apples, peeled, thinly sliced
  • 2 T. sugar
  • 1 T. fresh lemon juice
  • 1/2 t. cinnamon
  • 1/2 t. lemon zest
  • 1/4 t. nutmeg

Preparation

Step 1

Combine flour and 1 cup milk in large bowl; stir well with wire whisk. Add remaining cup milk and next 5 ingds. Stir well; set aside.

Coat 9" pieplate with Pam; add butter. Bake 450* for 1 mins. Pour egg mixture into pie plate; bake 5 mins. Reduce heat to 425*; bake 20 mins or until puffed and golden. Remove from oven; sprinkle with powdered sugar. Spoon apple topping into center and serve immediately.

Topping: Melt butter in large skillet over med-high heat. Add remaining ingredients; cook 7 mins. or until tender, stirring occasionally.
