  • 3 tbsp butter
  • 2 tbsp flour
  • 2 cups finely chopped celery
  • 2 cups vegetable or chicken stock
  • 1 grated potato
  • 1 bay leaf
  • 1 onion, chopped fine
  • 1/4 tsp thyme
  • 3 cups milk
  • 1 tbsp parsely
  • salt and pepper

Step 1

Melt butter; add celery, potato and onion. Cook 4 to 5 minutes, stirring constantly. Sprinkle in flour and blend. Add stock; bring to a boil. Add bay leaf, parsley, thyme, salt and pepper. Add milk; simmer for 20 to 30 minutes; stir occasionally.
