Pea Soup, Easy

Ingredients

  • 6 slices bacon, chopped
  • 2 onions, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound split peas
  • 2 cups chicken broth
  • 6 cups water
  • 1 cup sour cream, if desired
  • 1 cup ham cubes, if desired

Preparation

Step 1

Place bacon in a stockpot over medium heat. Cook until fairly crisp. Remove bacon to absorbent towels

Add the diced onions and the salt to the stockpot. Increase the heat to medium-high and cook the onions, stirring occasionally, until they begin to brown, about 10 minutes. Add the peas, chicken broth and the water. Bring to a boil. Reduce heat and simmer for 40 minutes, stirring often.

Puree the soup. Add salt and pepper to taste.

Return to the stockpot and reheat for about 5 minutes.

Pour soup into soup bowls and garnish with the bacon, ham or sour cream if desired.
